Want to lose weight but hate cooking? Girl, I hear you! Maybe you've spent decades feeding your family, and the last thing you want to do is figure out another meal. Or maybe you've never enjoyed cooking, and all those complicated recipes make staying on your Trim Healthy Mama plan feel like another full-time job.
You want to lose weight, get rid of that stubborn belly fat, build muscle, and feel good in your clothes again. But does getting there really have to involve chopping 14 vegetables, washing three pans, and spending your Sunday afternoon meal prepping?
Absolutely not! I've got some easy healthy meal ideas and simple meal prep ideas that can help you stay consistent with your Trim Healthy lifestyle without practically living in the kitchen.
As a Trim Healthy Mama Executive Coach, personal trainer, and menopause fitness specialist, I work with women who know what they should be eating but struggle to make it happen consistently. And sometimes the biggest obstacle isn't knowing what to eat. It's figuring out how to make it easy enough to actually do!
Let me tell you something that might take a little pressure off. You don't have to love cooking to feed yourself well. Just like you don't have to love exercise to work out!
Now, I actually enjoy cooking. It's a little like creating art for me. I love experimenting with flavors, trying new recipes, and putting meals together. But I know that's not everybody's experience.
Maybe you're cooking for one or two now, and those big family recipes leave you eating the same casserole until Thursday. Or perhaps you've spent 30 years figuring out what everybody else wants for dinner, and you're just plain tired of being the person responsible for food. I get it!
But here's where I want you to think a little differently. What do you want for your health? Do you want to lose weight? Have more energy? Build muscle? Feel stronger as you get older?
Those things matter, even when you don't particularly enjoy the work involved. And you can absolutely find ways to nourish your body that don't require spending hours in the kitchen.
Picture this. It's 5:30 in the afternoon. You're hungry, you're tired, and you open the refrigerator to figure out dinner.
There's food in there. Technically. But the chicken is raw, the vegetables need chopping, and the recipe you saved earlier says to marinate everything for four hours. Well, that ship has sailed!
So you close the refrigerator and start thinking about what you could order instead. Sound familiar?
This is one of the biggest reasons I teach my clients to simplify their meals. When you're tired and hungry, whatever takes the least amount of effort usually looks pretty appealing. And if the easiest option in your kitchen doesn't support your weight loss goals, you're going to have to make a lot more decisions when you're already worn out.
For women in perimenopause and menopause, this can be especially challenging. Sleep struggles, changing hormones, stress, and fatigue can all make it harder to follow through with healthy habits. That's why I want you to have a plan that works on your busiest, most exhausting days, not just the days when you've got plenty of time and energy.
One of the first things I recommend to my coaching clients is to stop trying to come up with something new every day. Instead, start with a much smaller menu.
Choose two breakfasts, two lunches, and three dinners.
That's it! You don't need 21 different meals for the week. You need a few meals that you enjoy, that satisfy you, and that you can put together without talking yourself into cooking.
We already tend to repeat meals anyway. Think about the restaurants you visit or the groceries you buy every week. You probably have your favorites! So let's use that to your advantage.
I was working with a client recently who really didn't enjoy spending time in the kitchen. Rather than handing her a big menu full of recipes, we started talking about what she actually liked to eat.
Eggs and berries? Great! That's one breakfast. How about oatmeal? She wasn't particularly excited about oatmeal until we found a recipe she absolutely loved.
Then we went through her lunch and dinner options and picked a few simple meals she could repeat. That's where she started. And ladies, this is important: You don't have to keep making something you don't enjoy just because somebody told you it's healthy. There are plenty of ways to nourish your body.
When you're building easy meals, I want you to start with one question: Where's my protein?
Protein is especially important for women over 40 because it helps us maintain and build muscle. And we need that muscle!
As estrogen changes during perimenopause and menopause, women often experience changes in body composition, including more fat accumulating around the middle and a gradual loss of muscle. Strength training and adequate protein are two important tools for supporting muscle as we age.
Muscle also helps support healthy metabolism, physical strength, balance, and our ability to stay active. So when we're putting together simple meals, protein is a great place to start.
One of my favorite shortcuts is a rotisserie chicken. When you get home from the grocery store, pull the meat off the bones and store it in the refrigerator. Now you've got protein ready for several meals. You can use the breast meat without skin for your leaner E or FP meals or enjoy other portions as appropriate for S meals.
Another easy option is to brown some ground beef or turkey ahead of time. You can cook it once and use it for several different meals throughout the week. Maybe half goes into a taco bowl and the other half becomes a Cheeseburger Pie casserole. You've already done most of the work!
Canned tuna and canned chicken are also great to have on hand. You can use them for quick salads, lettuce wraps, sandwiches, or simple bowls without having to thaw or cook anything.
And don't forget about Greek yogurt and cottage cheese! Both can be the foundation for a quick protein-rich meal. Add some berries, protein powder, or your favorite toppings that fit your Trim Healthy fuel type, and you're ready to eat.
You can also buy fully cooked chicken strips, hard-boiled eggs, or other convenient protein options. The goal is to make it easy to put protein on your plate without starting from scratch every single time.
Now let's put those ingredients together! You can absolutely enjoy satisfying Trim Healthy meals without making a complicated recipe.
Remember, we're still following our Trim Healthy principles. We're simply using ingredients that require less work.
One of my favorite easy breakfasts is overnight oats. You can put everything together in about five minutes the night before, leave it in the refrigerator, and breakfast is ready when you wake up. I like adding protein powder to my oatmeal, and sometimes I'll include a little additional protein on the side.
Another breakfast I love, especially when I'm heading out to play pickleball, is a protein smoothie made with kefir or Greek yogurt. I'll enjoy it with a slice of sourdough toast and a little spread, keeping the fats light when I'm having an E meal. It's quick, satisfying, and doesn't require standing over the stove.
Hard-boiled eggs and berries are another easy option. You may need to add a little additional protein, depending on how many eggs you're having. A small protein shake can work well here.
The point is that breakfast doesn't have to be complicated. Find a couple of options you enjoy and keep those ingredients available.
Lunch doesn't have to be a big production either. One of my favorites is a bagged salad topped with ready-to-eat chicken. You literally open the bag, put the chicken on top, add your favorite dressing, and you're done.
And don't underestimate the power of a good dressing! I love Rhonda's Ranch, Dill Pickle Ranch, and the balsamic dressing from the Trim Healthy Mama Wisdom recipe collection.
You can add seasonings, nutritional yeast, vegetables, olives, nuts, seeds, or a little Parmesan cheese, depending on whether you're making an S or E meal. A few simple toppings can turn a boring pile of lettuce into something you actually look forward to eating.
Another easy option is a taco bowl using ground beef or turkey you've already cooked. Add greens, salsa, vegetables, and your preferred fuel ingredients.
For an E meal, use lean protein, beans or brown rice, and keep your added fats light. For an S meal, you might choose a richer protein or add avocado, cheese, or other healthy fats while keeping carbohydrates within your S guidelines.
See how easy this can be?
Now, you may be thinking, "Kris, I don't want to meal prep either!" I hear you!
But what if meal prep didn't mean making five complete meals, filling a bunch of containers, and spending half your weekend in the kitchen? What if you just prepared a few ingredients so you could throw meals together during the week?
That's exactly what I do.
I spend about an hour a week doing what I call my 2-2-2 meal prep system. I prepare two proteins, two carbohydrate sources, and two vegetables. That's it!
For example, I might prepare ground turkey and chicken for my proteins, brown rice and roasted sweet potatoes for my carbohydrates, and broccoli and peppers for my vegetables. Now I've got the building blocks for several different meals.
Sometimes I'll spend a little longer if I'm making my favorite Anti-Inflammatory Muffins or a batch of pancakes. But generally, I can prepare these ingredients in about an hour.
And those few ingredients give me the foundation for multiple meals throughout the week! I can make taco bowls, chicken salads, quick stir-fries, or simple protein-and-vegetable plates.
I'm not making six different recipes. I'm assembling meals from ingredients I've already prepared. That's a big difference.
And if even the 2-2-2 system sounds overwhelming, start smaller!
Choose one protein, one healthy carbohydrate, and one non-starchy vegetable. That's your 1-1-1 meal prep system.
Maybe you cook ground turkey, prepare some brown rice, and have roasted broccoli ready. Now you've got ingredients you can use for multiple meals.
You might also choose one simple casserole, like Cheeseburger Pie or Cowboy Grub, to make ahead and enjoy throughout the week.
This is exactly how I helped one of my clients get started. She didn't need a complicated plan. She needed food ready to eat!
Ladies, we need to talk about backup meals. Because no matter how organized you are, there are going to be days when your plans fall apart.
Someone needs you. An appointment runs late. You're tired. Or you simply don't feel like cooking. That's life!
And I don't want one busy afternoon to become the reason you feel like you've fallen off your Trim Healthy plan.
For years, one of our family's favorite backup meals was breakfast for dinner. We almost always had eggs, ingredients for pancakes, or something we could quickly put together for breakfast. So when dinner plans fell apart, we already knew what we could make.
Your backup meals might look completely different. Maybe you keep canned tuna in the pantry so you can make tuna salad with lettuce wraps or an appropriate bread. Or maybe you always have rotisserie chicken and frozen vegetables available.
A Greek yogurt bowl, cottage cheese bowl, omelet, or simple sandwich with vegetables can also be a great backup meal. It doesn't have to be elaborate to nourish your body.
I want you to have at least two or three backup meals that you can make with ingredients you typically keep in your refrigerator or pantry. And make them meals you actually enjoy!
Because if you don't like the food, you're much less likely to choose it when you're already tired and hungry.
Let's talk about something I see all the time in coaching. Women think they need to do everything perfectly to lose weight.
They need the perfect menu, the perfect workout schedule, the perfect supplements, and the perfect week. And when things don't go according to plan, they feel like they've failed.
But ladies, that's not how we're going to approach this.
Maybe today you didn't cook a beautiful homemade dinner. But you opened a bag of salad, added some chicken, grabbed a healthy carbohydrate if you needed one, and enjoyed a satisfying meal. That's a win!
Maybe you didn't spend Sunday meal prepping, but you browned some ground turkey and washed your vegetables. That's progress too.
One of the reasons I love helping women simplify their food is that it removes so much decision-making. And when you're trying to improve your health in midlife, you've probably already got plenty of decisions to make!
You may be caring for aging parents, helping adult children, working, homeschooling, or taking care of your grandchildren. Your own health can easily fall to the bottom of the list.
But taking care of yourself matters. And I want you to start seeing healthy meals as one way you can care for the body God has given you.
First Corinthians 6:19–20 reminds us that our bodies are temples of the Holy Spirit and encourages us to honor God with our bodies.
That doesn't mean complicated cooking or perfect eating. It means being intentional with the choices we're making. And sometimes being intentional looks like keeping a rotisserie chicken in the refrigerator!
If there's one thing I want you to take away from today's conversation, it's this: You can support your weight loss goals, nourish your body, and build muscle without spending hours cooking.
You don't have to make everything from scratch. You don't have to cook a different meal every night. And you certainly don't have to love spending time in the kitchen!
Start with a handful of meals you enjoy. Keep easy protein options available. Try my 2-2-2 meal prep system, or start with the even simpler 1-1-1.
And always have a backup meal ready for those days when life doesn't go according to plan.
As a Trim Healthy Mama coach, I want you to have more than a collection of healthy recipes. I want you to have a way of eating that fits your life, supports your goals, and helps you become stronger and healthier as you age.
Because when you make it easier to nourish your body, you make it easier to stay consistent. And those consistent choices add up!

Then comes the frustration. The guilt. Maybe even a little shame because you know what you should be doing, but you just can't seem to stay consistent.
So you promise yourself you'll do better next week. And the whole cycle starts over again.
