Have you ever sat down to another plate of plain chicken and steamed broccoli and thought, "I cannot keep eating like this"? You want to lose weight, get rid of stubborn belly fat, and feel good in your clothes again, but somewhere along the way, healthy eating started feeling like a punishment.
If you've been following Trim Healthy Mama for a while, you know how to put together a healthy meal. But knowing what to eat and actually enjoying it are two different things! Today, I'm sharing some of my favorite easy healthy meal ideas, simple meal prep ideas, and mindset shifts that can help you enjoy your food while continuing to work toward your weight loss goals.
We're talking flavorful vegetables, satisfying meals, delicious Trim Healthy desserts, eating out, and making healthy choices that you actually want to repeat. Because if you're going to make this a lifestyle, you might as well enjoy what you're eating!
Picture two dinners. The first is plain chicken breast with steamed broccoli. You're eating it because you're trying to be good, but before you've finished your plate, you're already wondering what you can have afterward.
Now picture that same chicken seasoned with your favorite spices, roasted broccoli with slightly crispy edges, and a delicious sauce drizzled over everything. Both meals can support your weight loss goals, but you're probably going to have a completely different experience eating them.
On a recent coaching call, one of my ladies and I landed on a thought I absolutely love: "I can make healthy food taste good."
Sounds simple, doesn't it? But if you've spent years associating weight loss with giving up foods you enjoy, that thought might take some practice. When every meal feels like something you have to endure, staying consistent becomes harder.
You might push through for a few days or even a few weeks, but eventually life happens. You're tired, someone suggests going out to dinner, or you open the refrigerator and think, "If I have to eat one more container of this chicken..."
Enjoying your meals makes it easier to repeat the habits that support your goals. And consistency is one of the biggest pieces of successful midlife fat loss.
One of the biggest mistakes I see women make is thinking they need an endless supply of new healthy recipes. Ladies, you don't need 50 recipes! You need a handful of meals you genuinely enjoy, that work with your Trim Healthy plan, and that you can prepare without spending your entire life in the kitchen.
Start with a breakfast you love, a couple of lunches you can repeat, and a few dinners your family will eat. Then build from there.
One of my favorite breakfasts is Trim Healthy protein-strong pancakes with Optimized Chocolate Protein Milk on the side. I make several pancakes at once, freeze them, and pull them out whenever I need a quick breakfast. They also make a great snack!
This is one of those meal prep ideas that saves me from having to think about breakfast every morning. If you've got a breakfast you enjoy that keeps you satisfied and fits your fuel plan, why not repeat it?
I love creating bowls! Usually on Saturday, I'll prepare several ingredients separately so I can throw together different combinations throughout the week.
One of my favorites is a sweet potato, black bean, and quinoa bowl with lots of non-starchy vegetables. Add a lean protein to make it a satisfying meal, and you've got a colorful, filling lunch that tastes delicious.
The beauty of bowls is that you can switch up the seasonings, vegetables, proteins, and sauces without starting from scratch. For my Trim Healthy ladies, a bowl with sweet potatoes, beans, or quinoa can work beautifully as an E meal when you keep the added fats appropriately light.
Growing up in the South, we called it a "meat and three," and it's still one of my favorite ways to put dinner on the table. Pick a protein, add two or three vegetables, and include a healthy carbohydrate when it fits your meal.
You can adapt the meal to your Trim Healthy fuel type while making something your whole family enjoys. I also love soups and stews, especially during the fall and winter. The Trim Healthy Methylating Lentil Soup is one of my favorites.
The idea is to find meals that work for YOUR life. You don't need complicated recipes with 17 ingredients and three hours of preparation to eat well.
Let's talk vegetables. I was coaching a lady recently who really didn't enjoy eating them, and as we talked, I discovered she was mostly eating them plain. Well, no wonder she wasn't excited! We started looking at ways she could make her vegetables more flavorful, and it's been a game changer for her.
If vegetables are something you're struggling with, I want you to try roasting them. Start with broccoli, cauliflower, Brussels sprouts, carrots, or green beans. Give them a light spray of avocado or coconut oil, depending on your fuel type, and add your favorite seasonings.
I love Mrs. Dash, Kinder's Italian seasoning, garlic salt, and good old salt and pepper. Roast your vegetables at approximately 400°F for 15–20 minutes, adjusting for the vegetable and the texture you enjoy. I actually like mine a little crunchy, especially when I'm making extras for leftovers.
And don't forget the finishing touches! Sometimes I'll add Parmesan cheese or nutritional yeast. Other times, I'll drizzle a little balsamic vinegar over the top. For an S meal, pumpkin seeds or pine nuts can add wonderful flavor and texture.
You can even use an on-plan sauce or a lighter protein cheese sauce to make those vegetables something you look forward to eating. Experiment with different seasonings, cooking methods, and sauces until you find what you enjoy. And if there's a vegetable you genuinely don't like, find another one!
One thing I encourage my clients to do is create a list of meals they actually like. Seriously, call it "Foods I Actually Like." You can keep it in the notes on your phone or write it in a notebook. I'm still a pen-and-paper girl myself!
Write down the chicken seasoning everyone loved, the E breakfast that kept you satisfied, the lunch you could throw together in five minutes, and the Trim Healthy dessert everyone enjoyed at your last gathering.
Start with two or three favorites in each category: breakfast, lunch, dinner, snacks, and desserts. You can eventually work toward having about 10 favorites in each category, but please don't make that another assignment you have to finish this weekend.
Try one new recipe at a time. If you love it, add it to your list. If you don't, move on! Eventually, you'll have your own collection of easy healthy meal ideas that make grocery shopping, meal prep, and staying on plan so much simpler.
When you're tired at the end of a long day, searching for another healthy recipe can feel overwhelming. But looking at your list and thinking, "Oh, we really liked that chicken last week," makes dinner a whole lot easier. You're taking some of the daily decisions out of healthy eating, and for women juggling jobs, grandkids, aging parents, homeschooling, or everything in between, that can make a big difference.
Ladies, can we please talk about dessert? Because I don't want you going through life believing that losing weight means you'll never enjoy cake again.
One of the ladies on our recent coaching call was working on getting away from sugar, and she was really struggling with feeling deprived. So we talked about finding a few Trim Healthy desserts she could enjoy, and I told her, "You can lose weight and have your cake too. It's just got to be the right cake!"
If you've been around Trim Healthy Mama for a while, you know there are some delicious options. A few favorites we discussed were Volcano Mudslide, Mini Pineapple Upside Down Cake, Apple or Berry Crisps, Gloopy Pudding, Trimtastic Cake, and Secret Agent Brownies.
You don't need to make all of them! Choose one, try it, and see what you think. Maybe it's something you'll want to keep in the freezer for those evenings when you'd love a little something sweet.
Remember, we have different Trim Healthy fuel types for desserts, too. An E dessert may be lighter in fat with healthy carbohydrates, while an S dessert can contain more fat. Both can fit into your plan when you're thoughtful about your overall eating pattern.
If you're working toward fat loss, you may want to be mindful of how often you're enjoying heavier, calorie-dense desserts, but that doesn't mean you have to eliminate them. Finding satisfying options you enjoy can make consistency so much easier.
How many times have you arrived at a party, birthday celebration, or Thanksgiving dinner without giving your food choices much thought? You're standing in front of the dessert table, everything looks wonderful, and suddenly you're trying to decide what to do.
This is where a little planning can help. Ask yourself what dessert you'd enjoy bringing and whether you could make a Trim Healthy version of something you already love.
Two of my favorite holiday options are Trimtastic Cake and Pumpkin Bam Cake. And I have to tell you, a little low-fat cream cheese frosting makes that pumpkin cake even better! I've taken Trim Healthy desserts to gatherings plenty of times, and people often have no idea they're eating a healthier option.
If you bring something that doesn't get eaten, take it home, cut it into individual portions, and freeze it. Now you've got dessert ready for another day!
And what if Grandma makes a certain pie every Thanksgiving, and you want a piece? You can make that decision intentionally. Put it on a plate, sit down, enjoy the food and the company, and then continue with your usual healthy eating rhythm.
One dessert doesn't have to turn into an entire weekend of eating things that leave you feeling uncomfortable. You don't have to skip meals the next day or punish yourself with extra exercise. You simply make your next choice.
What about date night? Maybe you and your husband love trying new restaurants, or you've got friends who enjoy going out to eat. I don't want you dreading those invitations because you're worried about what you'll order.
When I'm eating out, I usually look for a meal built around protein, whether that's chicken, fish, steak, or another option. Then I look at the vegetables or salad choices. Sometimes I'll ask for dressing on the side or leave off certain toppings, depending on what I'm ordering.
And yes, I may take a little longer to order! But that's okay. If you want to stay on plan, checking the menu ahead of time can help you find something you'll enjoy.
Maybe you're going to a really nice restaurant, and there's a pasta dish you'd love to try. You can choose a protein and vegetables as the foundation of your meal and enjoy a smaller portion of another dish if that's what you decide. You might even share it with your husband.
Enjoy your food, enjoy the conversation, and don't turn date night into another coaching assignment. If you have the opportunity, take a short walk afterward. Research supports that walking after a meal can help moderate the rise in blood sugar, especially after meals containing carbohydrates.
That's a simple habit that can support metabolic health during perimenopause and menopause.
Now, ladies, this may be the most important part of our conversation. What do you tell yourself after you eat something that wasn't on your plan?
Do you immediately think, "I blew it," "I failed again," "I never stick with anything," or "I'll get serious on Monday"?
I've coached enough women to know how quickly those thoughts can turn one meal into several days of choices they didn't really want to make. As a life coach, I pay a lot of attention to what we're thinking because our thoughts influence how we feel and what we do next.
If you're telling yourself you've ruined the weekend, how are you likely to act? You may stop planning your meals, skip the workout you intended to do, or decide there's no point in trying again until Monday.
But what if you practiced a different thought?
"I chose that meal. Now I can choose my next one."
I love that! No drama, no guilt, and no starting over. You enjoyed dinner, and now you're continuing with your plan. You can eat your normal breakfast tomorrow, get your protein, and go for your walk without trying to compensate for what you ate yesterday.
Romans 12:2 reminds us to be transformed by the renewing of our minds, and I think there's such a beautiful connection between that truth and the way we approach caring for our bodies.
Sometimes we've practiced the same discouraging thoughts for so many years that they feel automatic. "I'm never going to lose this belly fat." "I'm too old to change." "I just can't stay consistent."
I often tell myself, "I'm doing better every single day." Does that mean every day goes exactly the way I planned? Of course not! But that thought helps direct my attention toward where I'm going instead of constantly looking backward at what I wish I'd done differently.
You don't have to do everything perfectly to keep learning, growing, and becoming stronger.
All right, my friend, let's make this practical. I don't want you to finish reading this and feel like you need to create an entirely new menu, buy a bunch of ingredients, and spend Sunday afternoon cooking.
Choose one thing to work on this week. Maybe you're going to roast your broccoli instead of steaming it, find a delicious sauce for your chicken, try one new Trim Healthy dessert, or start that list of foods you actually enjoy.
You don't have to become a gourmet cook to lose weight and feel good in your body. You need meals that nourish you, satisfy you, and fit the life you're actually living.
And remember, if you're in perimenopause or menopause, your body may be dealing with changes in sleep, muscle mass, fat distribution, and how you respond to your usual habits. That's why I want you building a strong foundation with adequate protein, healthy Trim Healthy fuels, plenty of plants, strength training, and habits you can maintain.
Enjoying your food belongs in that conversation, too!
