1 cup raw or roasted almonds
½ cup unsweetened shredded coconut
¼ cup cocoa powder or cacao
1 Tbsp baobab powder
¼ cup Pristine Whey or collagen
½ cup Gentle Sweet (finely ground)
1 tsp mineral salt
4 Tbsp water
¼ cup natural nut or seed butter
¼ cup coconut oil (melted)
1 Tbsp MCT oil
½ cup Lily’s chocolate chips
In a food processor, pulse almonds, coconut, cocoa, baobab, protein powder, sweetener, and salt until combined (3–4 pulses).
Add water, nut butter, coconut oil, and MCT oil. Process until the mixture sticks together when pressed.
Press mixture into an 8x8 pan or roll into balls.
Press chocolate chips into the top.
Freeze for 30 minutes. Store in the fridge or freezer in an airtight container.
Want extra crunch? Toss in some chia seeds or chopped nuts.
Need portion control? Freeze individually and only take one out at a time.
